Abstract

The availability and possibility of quantity assessment of quality production indexes take significant importance in order to manage the product quality and to raise its level for the producers.

In this article the author proposes her own methods of quality assessment of food industry produce taking baking branch of industry as an example. The proposed methods allow to get the level gradation of the quality of their produce and to convey the feasible quality level and its highest extent.
